Below we’ll share with you our Ekoa Vegan Blueberry Chia Seed Pudding: a 4-ingredient base recipe that you can add any toppings you wish. Give it a pinch of cinnamon for its anti-inflammatory properties and top it up with Ekoa Mango bar to make it a high fiber and antioxidant-rich snack.

INGREDIENTS

Base

  • ¼ cup frozen blueberries
  • 1 cup oat milk
  • 2 tsp maple syrup
  • Pinch of cinnamon (optional, but recommended)
  • 1/3 cup chia seeds

Toppings

  • 1 chopped Ekoa Mango Bar
  • Frozen blueberries
  • Pinch of cinnamon
  • Shaved almonds

 

INSTRUCTIONS

  1.  Add the first 4 ingredients to a blender and combine for 15-20 seconds, until smooth.
  2.  Transfer the blueberry mixture to a cup or sealable jar and add the Chia Seeds. Mix well and place it in the fridge for at least 3 hours, preferably overnight.
  3.  Top and serve as desired.
